ENJOY FAT FREE BAKING THIS WINTER

Winter is here, and as hard as we will try to stay in shape – the dreaded “winter munchies” will catch up with us ……….. it is usually during this time of the year when we go in search of those warm comfort foods and baked treats ……………..  For most people, home baked goods top the list of favorite comfort snack foods in winter.  Cookies fresh from the oven, hearty muffins, quick breads, and moist and delicious cakes warm the hearts of young and old alike. Until very recently though, most baked goods were made with large amounts of butter, margarine, oil and other high-fat ingredients – that we now know must be kept to a minimum in a healthy diet.  The good news is that this awareness has led people to explore new ways of baking, and as a result many low fat cookbooks are now available, and we are here to tell you that sometimes, just sometimes you can have your cake and eat it too…………  We would like to share a couple of delicious FAT FREE MUFFIN RECIPES with you taken from the SECRETS OF FAT FREE BAKING by Sandra Woodruff, RD – so if you have’nt baked in awhile or even if you have never baked before, preheat the oven, pull out the muffin trays and get ready to have a great time experiencing fat free treats ………… with nutritional value!

 

CRANBERRY MUFFINS

1 CUP OATS

¾ CUP SKIM MILK

1 ½ CUPS WHOLE WHEAT FLOUR

1 TBLSP BAKING POWDER

¼ CUP SUGAR

1 CUP CRANBERRY SAUCE

2 EGG WHITES

1 TSP VANILLA ESSENCE

¼ CUP CHOPPED CRANBERRIES 
  • COMBINE THE OATS AND MILK AND SET ASIDE FOR 15 MINUTES
  • COMBINE THE FLOUR, BP AND SUGAR AND MIX WELL.  ADD THE OAT MIXTURE AND REMAINING INGREDIENTS AND STIR JUST UNTIL THE DRY INGREDIENTS ARE MOISTENED
  • COAT MUFFIN CUPS WITH NON STICK SPRAY AND FILL ¾ WITH BATTER. 
  • BAKE AT 350 / OR 180 FOR ABOUT 18 MINUTES OR JUST UNTIL A WOODEN TOOTHPICK INSERTED IN THE CENTER OF THE MUFFIN COMES OUT CLEAN
  • REMOVE MUFFIN TIN FROM OVEN AND ALLOW TO SIT FOR 5 MINUTES BEFORE REMOVING THE MUFFINS
  • SERVE AT ROOM TEMP

 

BROWN SUGAR BANANA MUFFINS

2 CUPS WHOLEWHEAT FLOUR

1/3 CUP BROWN SUGAR

1 TBLSP BAKING POWDER

1 CUP MASHED VERY RIPE BANANA (ABOUT 2 LARGE)

1/3 CUP SKIM MILK

1 TSP VANILLA ESSENCE

2 EGG WHITES 

TOPPING: 

1 TBLSP BROWN SUGAR/1 TBSLSP TOASTED WHEATGERM – STIR TOGETHER AND SET ASIDE 

  • COMBINE THE FLOUR, BROWN SUGAR & BP AND MIX WELL
  • ADD THE BANANA, SKIM MILK, VANILLA ESSENCE AND EGG WHITES AND STIR INTO FLOUR MIX UNTIL MOISTENED
  • COAT MUFFIN CUPS WITH NON STICK SPRAY AND FILL ¾ WITH BATTER
  • SPRINKLE TOPPING OVER BATTER
  • BAKE AT 350 / 180 FRO 14 TO 16 MINUTES OR JUST UNTIL A WOODEN TOOTHPICK INSERTED IN THE CENTRE OF THE MUFFIN COMES OUT CLEAN
  • REMOVE MUFFIN TIN FROM OVEN AND ALLOW TO SIT FOR 5 MINUTES BEFORE REMOVING THE MUFFINS
  • SERVE AT ROOM TEMP

APPLESAUCE MAPLE MUFFINS

2 CUPS WHOLEWHEAT FLOUR

1 TBLSP BAKING POWDER

1 ¼ CUPS UNSWEETENED APPLESAUCE

½ CUP MAPLE SYRUP

2 EGG WHITES½ CUP RAISONS

¼ CUP ALMONDS OR WALNUTS 

  • COMBINE THE FLOUR, BP AND MIX WELL. ADD THE APPLESAUCE, MAPLE SYRUP AND EGG WHITES AND STIR JUST UNTIL THE DRY INGREDIENTS ARE MOISTENED
  • FOLD IN THE RAISONS AND NUTS
  • COAT MUFFIN CUPS WITH NON STICK SPRAY AND FILL ¾ WITH BATTER. 
  • BAKE AT 350 / OR 180 FOR ABOUT 16 TO 18 MINUTES OR JUST UNTIL A WOODEN TOOTHPICK INSERTED IN THE CENTER OF THE MUFFIN COMES OUT CLEAN
  • REMOVE MUFFIN TIN FROM OVEN AND ALLOW TO SIT FOR 5 MINUTES BEFORE REMOVING THE MUFFINS
  • SERVE AT ROOM TEMP

The benefits of good fats... to a bodybuilder.
 
Marius DohneI have been competing for over 11 years now and I’ve had lots of people advice me on different techniques and dieting principles, but never have I experienced such good results as what I have since I’ve been on the Palumbo diet. Now for those of you who don’t know Dave Palumbo is one of the top bodybuilding nutritional gurus in the US and is currently helping some of the top names in the IFBB Pro and amateur ranks. I have been working with Dave now for a few months but I’ve been on his diet for almost a year now and the results are amazing. Dave’s approach is simple and safe and health is a primary concern. So Dave’s diet is very health conscious as opposed to the normal bodybuilding diets out there. I am not exaggerating when I say I am using almost no fat burners and  doing almost no cardio and I’m in the best shape of my life because of this diet.
 
Ok I have the added benefit that Dave is personally adjusting my diet on a weekly basis via weekly update pictures I send him via email. But the diet is most defiantly worth a try and very easily accessible its so popular you can find it on Google.
 
I’m not going to go into too much detail about the diet because Dave has changed the diet slightly for my metabolism so I’m going to explain a few things the way I see it and how the diet has changed my physique and especially helped with my health.
 
In 2006 I was diagnosed with High Blood pressure and actually put on medication by my physician. My doctor said I’d have to take a tablet a day for the rest of my life. It was depressing but an easy adjustment because as a bodybuilder I take tablets on a daily basis any way. At the end of 2008 a guy by the alias of Palumbo`s Boy joined my forum on the Muscle Science website he was ranting and raving about this diet Dave Palumbo has perfected and after listening to him and seeing that he was a pretty knowledgeable person I decided to give this diet a try. It wasn’t long and I started seeing good results in not only muscle gain but also energy but the biggest benefit of this diet was still to be realised.

Time went by and everything was running smoothly I was defiantly seeing great results and was feeling great. Then one day my blood pressure tablets ran out but I knew it took about a day for the extreme headaches to develop so I thought I’d just pop into the pharmacy during the day and pick them up. Only, for some reason that day I completely forgot to pick them up... As I got home I realised I forgot but by this time the pharmacy was closed, I started to panic as I thought I wouldn’t be able to handle the pain through the night. Then I realized but I didn’t have any signs of high blood pleasure so I calmed down and had a great night’s sleep. I woke up the next morning and still nothing. I picked up the pills later that day and still nothing, so I ran a little personal experiment and saw how long it would take till the pain starts. But it never came. I seemed to be cured??? So I racked my brain to try think of what I have changed, but everything I did was the same, or so I thought, so I took it for granted that it must have been that I was in a much less stressful environment at work.

MSG AND OTHER TOXINS

Monosodium glutamate, also known as MSG, is a common food additive. It`s toxic and physically addictive. Fast food companies and other food manufacturers use MSG as a "flavor enhancer," so consumers will become "hooked" on their products and keep dishing out money for more. When people consume unhealthy foods containing MSG, they often gain weight and feel sluggish, and some also experience "MSG symptom complex." The symptoms can include headaches, chest pain, heart palpitations, nausea, and other heath problems.

Although MSG is normally associated with Chinese food, processed meats, and salty snacks, it`s also frequently found in bouillon cubes, canned soups and vegetables, barbecue sauce, salad dressing, and virtually every other processed food you eat. "Monosodium glutamate," or "MSG," won`t likely be listed in a products` ingredient list. It`s often disguised as calcium caseinate, gelatin, hydrolyzed vegetable proteins, autolyzed yeast, hydrolyzed yeast, yeast extract, soy extracts, "spices," or "natural flavorings."

Toxic Traps
Unfortunately, MSG is not the only toxin we`re exposed to on a regular basis. Toxic substances are in everything from the food we eat to the air we breathe to the water we bathe in to the products we clean with. Common toxins include PCBs and other industrial compounds, heavy metals, chlorine and other chemicals, molds, antibiotics, hormones, dioxins, and cancer-causing toxins found in meat and milk.

We absorb toxins and store them in our body fat. When you build up a lot of toxins, your liver becomes sluggish and doesn`t function properly. As a result, your organs stop metabolizing fat effectively and you gain weight. The more toxins you accumulate, the more weight you gain. And the more you weigh, the more toxins your body will store. It`s a viscous cycle.

The human body is designed to metabolize and "flush out" toxins, but since we take in such huge amounts, our bodies become overwhelmed and cannot properly process and eliminate all the harmful substances we amass.

Simple Ways to Detox your Life
It may seem like it is impossible to avoid MSG and other poisonous substances. While it is difficult to avoid toxins entirely, you can greatly reduce the amount of toxins you consume by eating organic vegetarian foods, especially fresh and frozen produce, whole grains, legumes, and other wholesome foods.

Eat fiber-rich foods, including brown rice and organically-grown beets, radishes, artichokes, cabbage, and broccoli, which are known as "detoxifying foods." Because organic foods are grown without the use of pesticides and artificial fertilizers, you`ll take in far fewer toxic chemicals. And, of course, since fruits and vegetables are naturally cholesterol-free and low in saturated fat, they`re healthier overall.

Organic meat is produced without antibiotics or growth hormones; however, it is not free of harmful dioxins, because animals absorb dioxins from the environment and store them in their flesh. When people eat animal products, they absorb the dioxins and other toxins that had built up in the animals` bodies. In fact, 95 percent of human dioxin exposure comes from red meat, dairy products, and fish. (The Institute of Medicine of the National Academies has even urged school lunch programs to offer fewer animal fats so that children aren`t exposed to so many dioxins.) Fortunately, there are no dioxins in grains, beans, fruits, vegetables, and other plant foods.

You can also help flush toxins from your body by drinking water, green tea, and taking herbs that protect the liver, namely dandelion root, burdock and milk thistle. Because vitamin C helps the body produce glutathione, a compound in the liver that drives away toxins, you can also benefit from eating citrus fruits, kiwi, spinach and other leafy green vegetables, and other foods rich in vitamin C. (And it goes without saying that you should stay away from highly toxic things like alcohol, coffee, and cigarettes!)

To detoxify your life even more, choose "green" cleaners and natural beauty products rather than chemical-based ones. Simply by shopping and eating smarter, you can drastically reduce the amount of toxins you take in.

And by buying natural products and organic, locally-grown fruits and vegetables, you`ll not only reduce your exposure to toxins, you`ll also help support farmers and companies that already promote healthful, sustainable living. That helps detox your body and your conscience.
